I'll be honest.. during the 4 years I have been crocheting, I have wondered why people get stuck in food related crochet. I just didn't understand the appeal to that extent, until I made the Ice Cream.
So far I have reviewed or written just the three sweet patterns but I can already envision all the foods I MUST make!

How to Make Stir Fry

The main inspiration for this recipe comes from receiving all that extra rice when getting Chinese take out. So much work goes into harvesting every grain of rice. It is so crushing to throw any food away, especially rice. This is a quick and easy way to use up random veggies and leftover rice to make a healthy and filling meal for the family. It is also great to eat as a late night snack straight from the fridge or for a cold lunch the next day when you're on the go.

Tip: There is a term the French use, “mis en place” which means “putting in place”. It means to have all of the ingredients for the recipe and having them prepped and ready for cooking. Practicing mis en place ensures that you won't be half way through making your dish and realizing you are out of a key ingredient. It also ensures that you can execute without worrying about cutting or chopping while something is sitting and burning in the pan. Making this stir fry is a great way to practice prepping everything or mis en place.

 

Orange Sauce

 

Orange Sauce

¼ cup of sweet chili sauce
1 orange zested and juiced
2TBL Soy sauce or Tamari
1 tsp grated ginger
2 grated garlic cloves
1 tsp vinegar

 

 

Chopping up veggies for stir fry

Veggies

1 whole onion
1/3 cp mushrooms (I used baby portabella because it was the organic choice on sale)
1 cp shredded carrot
1 cp green beans, diced (You can use snow pea or sugar snap peas)
1 cp broccoli
½ cp purple cabbage
1 ½ – 2 cp of rice, already cooked (I used leftover rice from take out)
1 TBL cilantro

 

Methodsaute mushrooms and onions

Saute the onion and mushroom in coconut oil on medium low heat till caramelized.
Push to outer edges of pan.

Add carrots to middle of pan. Sautee till slightly tender. Mix with onions and mushrooms.
Push to outer edges of pan.

Add in green beans and broccoli. Sautee till tender. Mix with rest of veggies.

Add the cabbage, Rice, cilantro, and orange sauce and mix. Now eat!

Peanut Butter- Chocolate Fudge – Easy!

Easy Chocolate and Peanut Butter Fudge!

 

This is my own personal recipe for my favorite kind of fudge – Peanut Butter & Chocolate! And of course, if you know me, you know I like EASY!

I cut my fudge a little early.. because I am a chocoholic who just cannot hold back from stuffing my face. 😉 Once a few people send me their photos, I will add them all to this post! Enjoy!!

Ingredients and Supplies
2 cups of sugar
1/2 cup of milk
1 cup of peanut butter
2 heaping tablespoons of cocoa (unsweetened)
1/2 tablespoon of butter (plus butter for greasing plate)
1 tablespoon of vanilla
1 dinner plate
large sauce pan
bowl

Step 1: Butter the plate completely.
Step 2:  Measure your peanut butter, vanilla, and butter out into a bowl. Set aside.
Step 3: Measure your sugar, milk, and cocoa into your sauce pan.
Step 4: On medium heat, bring your saucepan to a boil. Boil for exactly 4 minutes. (I used a timer)
Step 5: Empty bowl contents into your pan. Stir until well blended. Pour over your plate. Do not take your time! It will thicken up to harden quickly.
Step 6: Set aside until it cools completely. You can put it in the fridge to speed up the process. Slice it up and EAT! 🙂

Christmas Party – Apple Cozy – Free Pattern Review

Christmas Party Apple Cozy

It's Christmas time! That means, Chocolate, hard candy, and pure sugar EVERYWHERE! Although I love sweets, just as much as my daughter… I wanted to send her to school with a Christmas party snack that wasn't the normal sugar rush idea.

What better than an apple wrapped in a red and green cozy?

To make this apple cozy, I followed the Large version of THIS PATTERN. I used Red Heart with Love and a 5 mm crochet hook. I didn't make the drawstring.. because they clearly fit well enough to have no need to tighten. I did want to add name tags, so I cut felt into leaf shapes and hot glued them on!  Each one took be a little more than an hour. But I could have made them faster if needed.

My daughter loves them, as I am sure the other 3-4 year old's will too!

Frozen – Themed Sugar Cookies

Frozen Themed Sugar Cookies

Last night my family was talking about our love for cookies… especially sugar cookies! My daughter said with such a disappointing tone “I've NEVER had blue cookies before.”

At that moment, I knew I was going to have her help me make some blue sugar cookies. We followed the recipe by CindyAnn on Allrecipes. You can get your copy >HERE<!

The only changes we made, was adding food coloring! She tells you to sprinkle the sugar on top of the dough before baking.. and to my daughter and my surprise – they look like they belong in the ever so popular Disney movie Frozen! 😀

While I write this post, we are eating our cookies and watching the movie for the 100th time. <3 So much fun!

How to make Rainbow Jello

Walking through the grocery can be like a dream for us artists! Every single time I walk by the jello.. I see so many colors and have to fight the urge to make something beautiful out of them.. no more fighting! Let the artist in you shine through everything you do… even cooking!

How to Make Rainbow Jello

First you will want to buy the small boxes of whatever colors your heart desires. Here are the flavors/colors I used.
Black Cherry – Purple
Blueberry – Blue
Lime – Green
Lemon – Yellow
Orange – well, orange… 😉
Cherry – Red
Raspberry – Pink

I made one color at a time. Boil one cup of water and poor it into a bowl with the jello mix. Mix it until dissolved. Add 1/2 cup of cold water.  Pour it into your clear dishes. I used a large glass bowl and also 4 personal size glasses.

The first color may take up to 20 minutes to set (in the freezer) But after the first color, each one will take about 5-10 minutes to be firm enough to do the next. Way easier than I expected!

Deep Fried Strawberries

Deep Fried Strawberries

I have been sucked into the pinterest black hole- again. This time, I seen someone make cheesecake stuffed deep fried strawberries!

I decided to skip the cheesecake part because I knew after I made the cheesecake mix.. I would probably need  a little patience and let it chill before tossing it into some hot grease.  I am so glad I did because between the sweetness of the strawberries and the little bit of sugar I sprinkled on it.. it was all the sweet I needed! It really was delicious too!

I really didn't follow a recipe for this.. I used pancake mix. I mixed it to be a little bit thicker than I usually would for pancakes. I was planning on making my homemade pancake mix, but sometimes the easy way out is…. easy 🙂

I tried so hard not to eat them all before they were cool enough for my toddler to eat. She ended up with two of them. 🙂 lol I just couldn't stop!

Egg-Free Peanut Butter Cookies

Egg Free Peanut Butter Cookies

After discovering all my stepsons food allergies, I have started hunting for recipes that exclude certain ingredients, including eggs.

Today I was looking for a good egg free peanut butter cookie recipe and found this one on Food.com by Meg Stevens.  If I were to rate this recipe- I would give it 4.75 stars! It is made from basic ingredients that most of us always have in our home and it has just the right amount of sweetness to cure any sweet tooth without going on a complete sugar overload.

I did make a couple minor changes. I added a tad extra vanilla. I am not sure why I always do this… but I tend to do it with every recipe that calls for vanilla. I also made the dough balls about an inch wide instead of 1/4th. It just seemed more realistic.  The first batch I made, I cooked for 10 minutes and they turned out the perfect crispiness that my husband loves. The second batch I cooked for 8 minutes and they turned out the perfect chewiness for me!

I plan on making these again and maybe even trying to find a good way to add a smashed banana! YUM!

Good Morning With Your Coffee Bars Recipe

I have a major sweet tooth. Earlier today I was trying to think of something yummy to throw together for after dinner stack with my daughter (She loves to help and eat flour). I am very proud of these Good Morning Bars. SO much that I am going to seal some of them up for my morning coffee tomorrow. They remind me of a mix of coffee cake and brown sugar cinnamon bars…. with raisins! Simply delicious!
